If you are only worried about a few days you just keep your fuel tank full and run your generator as necessary. I consider Hurricane Katrina just such an event and we worked in that area for 6 weeks with no power and sporadic power. At one point running our generator 24/7 for 9 days straight. If you think you want/need solar then do a search for solar installations and you will get a lot of information. 3-4 big panels and 4-6 good deep cycle batteries along with a larger inverter (600W won't power much more than your TV's) will keep you off the grid with only occasional generator usage. As mentioned earlier, with no power you may not be able to get any water and the RV you mention does not have much on board storage capacity so you will need to plan ahead and have some auxiliary water bladders that you can carry in your towed.
