I've got an 80 gallon gray and 60 gallon black tank. I think I prefer your setup for a couple of reasons. First you get 40 extra gallons of capacity and secondly, it just makes more sense to fill one tank rather than two. You don't have to worry about one tank filling up before the other.
My only possible issue would be using a portable waste tank. I've went to one campground that allowed us to use the blue tank for grey water, but not black. I was able to shower at will and not worry about filling the tank. I would empty the gray tank daily.
Liberty has a gray water bypass so if you want to separate the gray from going into the 'big' holding tank, you can. You will just need a hose to connect to the bypass either put it in a container or water the grass.
In the way that we will use the coach, we are always from pole to pole or sewer to sewer. LOL!
Another interesting item about a Liberty is that they use all the water from the fresh water tank only. When you connect to city water, it's only for filling the holding tank, all inside plumbing water comes from the holding tank. At 180 gallons, filling won't be too often.
