Class A's with big fresh water capacity
Any class A manufacturers and models that tend to have larger fresh water capacities? Am looking for 28-32 'ish with as much fresh capacity I can get, preferably 80-100 gal.

That could be because the Eagle has a lot of heavy amenities added to those coaches. It probably has granite counter tops instead of Corian. Those are pretty well made coaches. And since they have added a lot of heavy equipment, they had to cut down some where else and the water tank was one of them. Even though I am surprised at your post. I would have thought that a top coach like a Eagle would have had at least a 100 gallon water tank.
