We went from a 23', 3 bed Hybrid Trailer to a 32' Class C with 2 slides. Our Jayco Greyhawk 31FS has two bunks for the kids (we have two, 13 & 11). We loved the floor plan in ours and the two bunks for the kids was a great addition and got their seal of approval. The only thing we really sacrificed was a pantry. Our trailer had one and it was really nice. Now that the kids don't use the bunk beds (they only did for 3 years or so), the bunks are a total waste. My son uses the cab over bed and my daughter usually uses the fold out sofa, which is a pain on long trips. I'm thinking of removing the lower bunk and putting in a desk and office chair; leave the top bunk for guests.
A Class C is a big investment that hopefully will last you many years. However, your family's needs may evolve over the years. We thought the bunks would last the kids until they were a few years older than they are now. If we knew they'd only use them for a few years, we probably would have went with a floorplan without the bunks and more living space.
Ours is rated for 5000lbs towing. It has a boxed frame all the way back.
