It’s unlikely it has anything to do with which leg of your trip you were on.
Assuming it’s one of those CB’s tripping and resetting, it’s going to take some knowledge of the circuits each one is protecting in order to test each one. Your owners manual may have that info, but don’t be surprised if it doesn’t.
As new as this unit is, I would be checking into getting Coachmen to authorize warranty service at the closest, most convenient location to you, or even a mobile RV service tech. I’m of the opinion that electrical problems shouldn’t be ignored.
That yellow with black-stripe wire going to the item I marked #2 isn’t pinched under the seal and anything metallic, is it? Just wanting to make sure.
