Check on gate closing times at Bahia Honda State Park. When we stayed there, they closed the gates at 8pm, so we had to leave Key West by 7pm(ish) to avoid getting locked out. That may have changed. Sunset on top of old bridge at Bahia Honda is breathtaking.
