Our first Class C came to us with two new deep cycle 12V batteries, and they failed in short order. All the 12x2 sets I tried had problems. Admittedly, old MagneTek converter/charger. I went to 12x1 and an automotive charger. No further problems. Current coach has a better IOTA c/c and it's 12x1. It does fine, but we use hookups.
If I needed more capacity than that 12x1 I would go to 6x2
I will Never Ever go back to two 12V batteries setup in parallel. Two 6V (AGMs) in series has been working so much better for us with our particular motor home. What a world of a difference. We near exclusively camp without hook-ups, very dependent on battery power. The experience has been so much better with two 6V batteries.
