If the dealer won't let you drive for two hours, at least ask if you could sit in the seat for a couple hours, and then buckle in and read a few chapters of a book or do a crossword or something. I'd think that should be sufficient to see how it might work out in actual use.
In general, I would not expect any RV to have seats that are insufficient for a 5'11" person, in general. The average male height in the US is around 5'9", and 5'11" is hardly an exceptionally tall person. That doesn't necessarily mean you specifically would find a particular seating arrangement comfortable or uncomfortable, of course.
