When you drive in windy conditions is an issue that only you can answer. If YOU do not feel comfortable behind the wheel at any time, don't drive.
I installed four corner air bags on my coach and pump them up to 90 psi which stiffens the ride but has allowed me to continue our journey out in the Great Plains with winds around 50 mph. I also start out before sunrise which is when the winds are a little lighter. In the Great Plains area of the country there are times when the winds don't really die down too much and you either figure out a way to deal with them, or you stay parked for several days.
