My question was really:
1) How much of an issue is heat?
2) Is it ok for the RV/safety to run the generator to power the AC for a few hours when we're not at a hookup, or better to crank non-accessible windows?
I'm pretty sure we brought our lab mix with us to Disney's Fort Wilderness. However, their camp sites are heavily wooded, and it was December in Florida. We left our dog in the camper while we were out. We always came back for lunch.
We were hooked up to power, so the furnace/AC could operate as needed.
The only way to know the answer to your heat question is to put a thermometer in your RV and park it in your driveway over a sunny weekend and see what kind of temperatures you get inside your RV with your vents open and your windows cracked.
If it stays in the 80's inside you should be OK provided you leave water.
Personally, I would be leery of leaving the generator running while unattended. You could have a carbon monoxide leak. The generator might have a mechanical problem and shut down or catch fire.
