I was thinking using a car roof mount type dvd player with 19" screen to save space, I know they have standard audio video input but I'm not sure they have a cable input?

I know, but much more expensive AND! a lot less forgiving, in my case this is my first project, "trial and error" will be applied very often.
One thing I like about fiberglass insulation is that it will be sandwiched between the outer body and the inside plywood leaving no gaps or air pockets. when you shoot foam on the outer body you have to stop before it expends beyond the plywood leaving an air gap of maybe 1/2" between the foam and the plywood, that gap will have colder air creating drafts in cracks. my day job is architectural technician and I built one or two houses in my life, I'm not arrogant and act like I know everything, residential housing and rv insulation is very different, that's why I'm here :) I know having a metal outer body is totally different than having a breathable tyvek outer house wall with a vapor barrier inside, although very popular I think bubble wrap should be avoided, but I have so many questions about insulation, I will create a thread with all of them very soon.
