Probably more than just eating, working on my laptop, checking out maps and planning routes, I'm pretty sure I want my table.
........ I put my laptop on my lap. My maps are on my laptop. I do have a swing out tray for eating. I dumped the "table" first thing when we got the van (used).
I will be cooking every meal, I'm not a big fan of restaurants
...... I dont eat out, but my diet is simple and doesnt vary much day to day; yogurt, salads, fresh veggies and meat. An electric fry pan, microwave and electric coffee maker meet all my cooking needs. But some people cook much more elaborate meals which would, of course, need more kitchen.
I certainly would not use fiberglass insulation for anything.

........ insulation people call fiberglass "expensive air filters". I have old homes and have had the fiberglass removed because as it ages it breaks down into fine glass shards that may well be as bad to breath as asbestos. We used blown in high density cellulose in our old homes. But I would have used foam if we could. I have never heard foam needs an air gap, in fact, in dome homes foam is sandwiched between ply and used structurally.
