I have a Coachman Saratoga and the stove top is on top of the refrigerator and additional drawers under the sink one of which has a microwave in it and we use that a lot more than the stove. We also have a short storage as an overhead cabinet above the stove, sink etc plus top cabinets above the foot of the bed. Where are you going to put fresh water. If you have it inside you may be able to some use in cold weather. If you put it on the underside you will have to insulate and possibly heat it. Speaking about heat will you have some type of heater. That night mountain air can be cold. One last thing I noticed older dodge units has a drop down floor in the center allowing a lower profile roof. I don't know if others can do this or not.

Storage areas :
-all around at eye level (overhang)

-in front, above the cab
-in the back under the floor (removing spare tire)
-under the left bench
-outside box on the back door
-bathroom, over the toilet (towels)
-microwave is on top of the fridge and a food cupboard is on top of that
I also want to add an outside hatch on the lower side of the body somewhere and install a metal box for extra storage like lawn chairs or something.
Fresh water tank
-under the right bench, over the floor(heated area)
There is no plumbing underneath the floor, everything is in the heated area.
Heating
-furnace is under the 2 burner gas stove
