I was just looking at your plans, which are awesome, but I was thinking, if you took that cooktop and turned it 90 degrees, you could bring the sink closer to it and gain some counter. Or if you just pushed it back towards the van wall, you would gain that counter space that is now between the cooktop and the wall, space that is unusable for food prep when the stove is lit. Same with the sink. Move it towards the wall.
