Can's wait to see more, I admire your courage in this project.... At the point where you are would it not be better to just rip it all off and rebuild it the way you want? In most cases there will be some small changes that you would like or change in finish etc. These days the colours are getting lighter which makes everything feel bigger and larger windows etc that adds to the airy feeling. Going by your last post there is not much left in any case and you mentioned that cabinets would also need work or replacing.
