I pulled up the Product Brochure Here and I make the Towing Capacity to be 4,220 pounds. That's nearly 1,000 more than an unloaded CR-V. I base that on the max GVWR (fully loaded weight) of the coach. So if your actual scale weight is less than GVWR then towing would go up, as far as the hitch rating of 5,000.
That Sprinter has a gutsy little diesel. I think you'd be able to "go" anywhere you want to, particularly along the East Coast. Grades in the western mountains would be taxing. Good thing about a turbo diesel is she doesn't get altitude sickness like gassers do. Still, weight is weight.
Spent some time on the brochure: Navion IQ is adorable! Wish you lots of enjoyment with her.
Your CR-V IS 2014 or earlier, right??? The newer ones have a CVT instead of a real transmission and are no longer towable.
