I joined St. Brendan's Isle and made that my legal residence. I filed a declaration of domicile with the county courthouse to make it official and I even registered to vote there.
Now, this doesn't work for some things like bank accounts. If you haven't dealt with an address change and your bank recently, you may be in for a rude surprise. Technically, banks are prohibited from accepting mail forwarding services as physical addresses. I have a great relationship with my bank and managed to get them to accept it, but you may need to use a relative's address for that. For taxation purposes, I'd do my best to find a relative in a tax friendly state if you are going to declare your physical address there. Remember that any state with an income tax will be itching to consider you a resident.
Since I am traveling to Europe before I start full timing, I haven't tackled insurance yet, but I hope you will let us know what you find out or at least PM me so I can benefit from your research. In addition to car and RV insurance, you will probably want to notify your health insurance provider.
