The generator may be rated at 7500 Watts max output, but it is actually two separate output legs each at half that 7500 Watts that feed your coach. You should have two breakers on that generator, and if you looked at them you would have seen they are probably rated at 30A each. Most commonly, one side of your coach 120VAC circuit feeds most of your outlets, your Microwave, and ONE Air conditioner. The other leg feeds the other Air conditioner. Your Microwave probably draws 15 amps. The one Air conditioner on that same leg probably also draws about 15 amps. Then add other misc. stuff on the circuit too. That is why your breaker tripped. In my coach if I were in your circumstances I would shut off the air conditioner that is on the MW oven circuit and just leave the rear AC running until the cooking is done.
I can't explain why your Xantrex keeps cycling into bulk charge mode. I'd monitor the battery voltage for starters to see what is going on ... are the batteries being depleted more quickly than they should be?
