Well, as you know and have experienced, your inverter, if "ON", and the generator is on, will be in the stand-by mode. The circuitry will sense incoming A/C voltage and, since shore power and, generator power is propriatory, the Inverter is in stand by mode.
But, loose either of those and, the circuitry in the inverter immediately senses that and, kicks in the inverter to take over the load(s).
Now, by the way, your generator does only have ONE 35A breaker on it. And, if it's like our 7.5QA Onan, it's rated at 65A or, 66, I can't remember. In any case, it should handle both A/C units without too much trouble. But, having that much capacity in Amps, doesn't mean it's going to handle a load that may run close to that capacity, all the time. And, as many of us have found out in RVs and, home A/C circuit breakers, they GET WEAK.
Sometimes, they pop when they shouldn't. I've had that happen in my stick and brick place a few times. Researched the issue(s) and, never found any so, I simply replaced the breakers in question and, it's never happened again.
Now, as for your Xantrex, can't help you there. Those are WAAAAAY over my little head. I know some basics about them but, that's the limit.
