My 7500 had two 35 breakers. If the AC unit and the oven are on the same leg so it is possible for to trip one of them. Since you are dry camping the batteries are being charged at a high rate and you HW heater is probably on also.
Couple of things to try:
Reduce the load sharing setting for the inverter to 20 amps. That will reduce the charging current and take some load on the AC end.
Find out which AC unit is one which leg and which leg you oven is on. Same with other high AC load appliances such as HW heater.
Running on the gen set is a matter of balancing your loads so you need to know which ones on on and om which leg.
Do that first before assuming there is a problem.
