Maybe you're not getting enough wraps around the ratchet spindles?
What Doug said. When you use ratchet straps a lot of people pull all the slack out and then start ratcheting them tight. This doesn't put enough strap around the ratchet and causes them to slip. I used to be a loadmaster in the Air Force and we were required to make sure that there was 1 1/2 turns around the ratchet when using tie down straps.
This happened to me a few times when we first started towing on a trailer as opposed to 4 down. Make sure it is well wrapped on the ratchet. For what its worth we go over the tires and cinch it down till the tires start to flatten, Never had it move yet. I'm fairly certain it could hang upside down after some of the bumps we have hit... including a couple times when it was airborne. :)
