The only bay that needs to be kept warm is the wet bay - for tanks. I have a "blower" on/off toggle in that compartment. I am a fulltimer, never winterize, but travel from the northeast to Florida in late Dec. I put a temp sensor in the wet bay - keep the monitor on the dash - when the temps in the bay get near 32 I turn on the furnace.
