How do you winterize water heater OUTput pipe?

I would "ASSUME" that the portion of pipe above the WH just drains down into the
WH tank. the part I worry about is the section of vertical pipe on the side of the tank that is shut off with a valve.I do not put any antifreeze in the WH tank or the FW tank.
