You might try telling them, you believe they are "acting in bad faith" And you are going to file a complaint with the insurance commissioner.
Insurance companies in general are not real fond of bad faith issues, and the insurance commissioner looking into them. It may motivate the to be a bit more reasonable.
And no they don't have to pay you what you just bought it for. They may in fact pay you less or more. ( you may have overpaid or underpaid)
Go to Rv dealers, search craigslist, find the same rig and get in writing what a dealer would sell such a rig for. (dealer value, not private party value) Also check NADA
Then you have something to value your rig at.
