As far as I know uninsured motorist insurance only covers medical.
Seems to me you were already talking to the other guys insurance as I'm sure you don't have collision.
Yours is an old story that happens every day. You paid $2500 so we know the value. At MOST, you would not get more than that value.
I do believe you are owed something but sounds like you're really looking for a way to get rid of it and buy something else.
