Nada low retail is 8,500K. Doesn't matter what you paid for it. Get a couple estimates of repair to pre-collision condition. If over 8.5K it is totaled, if not you have a repaired MH.
The main thing I see here is establishing a current value (pre-collision) as a base your claim. If you are happy with 2.5K then show them your bill of sale and an estimate of repairs at, or over, that amount. If you want a fair market value Google prices to replace your MH with a like or comparable MH and establish that as the fair market value.
It is a pretty simple formula actually. Fair market value vs. estimate of repairs equals total or repair. You can't manipulate the numbers to get the answer you want.
I realize to you it is a big deal, but to the insurance company it is another normal business day.
I am interested in the actual estimate of repairs; so far you have not directly answered except to say a lot... No total dollar amount.
Whichever way it goes good luck and I hope it is resolved quickly.
