We boondock way more than we have hookups and don't use inverters.
Get a vintage percolator and use the stove. You won't need an electric coffee pot. Get TVs that will run off 12 volts, 12V chargers for your laptop, phones, etc. and replace all bulbs with LEDs. I even got a nice JVC boom box with remote that plays everything that runs off AC or 12V. Toss the 12V house batteries and get a couple 6V golf cart batteries. they will last longer.
The only thing that has to run off AC in my rig is the air conditioner and microwave. We have a gas oven and BBQ outside so we don't use the micro when boondocking and don't miss it. Don't use the AC much since the roof fans are all 12 V. If I'm desperate to cool of the RV I'll run the gen and use the AC to cool it down. Only happens a couple times a year.
I have a 300 watt inverter stuck away in a drawer. Has not been used in a couple of years. Inverters are inefficient and use up more juice than running directly off DC. I added 12V outlets by the bed, over the table, and in a couple of cupboards.
