Just to play devil's advocate here, our truck has no genset, but it does have:
-- A Magnum 2800 PSW inverter,
-- 500w of solar power,
-- 2x125A of alternators,
-- 4x300Ah 6v Lifeline AGM batteries.
and these run:
-- Induction stovetop,
-- Convection microwave,
-- Air Conditioner,
-- Espresso maker,
-- Refrigerator,
-- Fantastic fan,
-- Nature's Head toilet,
-- And a lot of LED lights.
Our typical overnight drain is between 100 and 200Ah depending on the weather, menu, etc. On a typical travel day, we recharge to over 90% with two to three hours of driving and the solar kit finishes the job by sunset.
We have not plugged into shore power for months, so it can be done; you just have to be the least bit careful.
Why Magnum? Made in the USA and bulletproof support.

An installation like this is not, however, a trivial undertaking; the camper was built around this set up to avoid the need for propane or shore power.
