I've gone the minimalist approach on mine and so far it works for me. I use a 300 watt Samlex pure sine inverter, 300 amp hours of Lifeline AGM batteries, and 200 watt solar installation. No matter what size you decide on, I've had good service from all the Samlex inverters I've owned..large and small.
I use this for coffee in the morning (without hookups) and clean up is a cinch:

On my camping schedule I'm not in a rush so conventional oven works fine for me.
I'll fire up generator for the few times I need to vacuum the interior, use microwave (generally in a rest area), or run the roof air. The generator needs exercise anyway and that is one of the ways I get it in. Like you I don't like running it, and do most trips without it.
