On my camping schedule I'm not in a rush so conventional oven works fine for me.
I'll fire up generator for the few times I need to vacuum the interior, use microwave (generally in a rest area), or run the roof air. The generator needs exercise anyway and that is one of the ways I get it in. Like you I don't like running it, and do most trips without it.
I like the sounds of your approach, it keeps things simple, which I like. I'm usually not in a rush when I'm out and about in my RV. I especially like taking my mornings slow, with a good brew.

I've really been spending a lot of time this am reading about those coffee drippers. I have an old plastic one I use once in a while, nothing special. I checked those out at Amazon and read the comment reviews. Oh man, thos reviewers really get in to their brew drips!
I take a similar aproach with my genny, run it as I absolutely need it, and for the sake of running it to keep it in running order. After I make a decision on the inverter install, I would like to explore solar power. I think I would really like the solar angle of options but just not experienced enough to delve into it.
