The wiring options are endless and everybody will have different ideas.
When I had big inverter/charger with automatic transfer switch in my conversion (what I consider a Cadillac of inverters), I had whole house wired via it. That made no hassle of switching, or remembering.
In newer camper I add cheap inverter for coffee maker and microwave (fridge has 12V option).
The best way I figured is to mount inverter in dead space under countertop, what made short way to batteries and use 2 plugs on it.
1 plug went to duplex on kitchen wall, where GFCI outlet has small LED showing the power (for coffeemaker) and for microwave I cut 120V cable that was going from main panel and install the plug on it, that goes into other inverter outlet.
The other end of cut cable has 120V socket installed on it, so the only thing go remember between dry camping and shore power is to replug the cable between inverter and hardwire. Inverter has remote switch mounted above extension duplex on the wall.
