Consider shopping the choices and values as a hobby for a while, and learn the mileages, features, and prices that come up regularly, and those that are outside the norm, better or worse. You'll get a picture of what you want and what works for you after some effort, so enjoy the process. Shop for local or regional dealers and RV shops at the same time, and read the reviews. Even without learning the mechanical info, you will get a feel for what looks dependable and what does not, and if in doubt, look for that seller backing to cover you.
We are still figuring how to plan travel with two dogs in a camper. As you said, expectations of places to visit may need to be modified. But we like the outdoors, and we figure at certain stops for us (such as at an antique store), one goes in, while the other watches the dogs. Restaurants might be carry out, or sitting on the patio with the dogs in the camper nearby with windows cracked. All in all, we'll just adjust so that we can get away from home. We also like to look at countryside, small town features, etc., so we'll just emphasize what can be done with dogs, and de-emphasize the rest, and plan non-dog trips when needed. But we like the idea of more trips, and bringing the dogs along. Good Luck.
