Obviously, your home situation is going to get tougher. Since you have 'waiter/server' experience, trying to get a job in 5 star restaurant could help your income. I'm making a lot of assumptions here but I would think that you are excellent at what you do.
Securing employment at a nice steak-house, etc., or similar, where the average bill is $200-$300 or more would boost your tip average. A particular steak-house that we frequent with friends has a waitress that we have known for almost 30 yrs. We always request her as she is excellent but is getting older now as she put her kids all the way through college waiting tables. She's probably in her early 70's now and working more part-time and can't work in the area of the restaurant where there are steps. Taking drinks up and down steps takes good balance.
It wouldn't surprise me if she pulls in $1,000 in tips a night on the weekends. This restaurant is known for their private rooms for groups, excellent for entertaining friends.
So, I have to agree with the others, full-timing in a RV whether it's a Travel Trailer, Class C or A, won't be cheaper, if at all, than your apt. This doesn't mean that you can't pursue your dreams, you just have be realistic and smart enough to support your family.
