Assuming you have an RV left after the terrible conditions on I 287. Came through on that a year ago and thought I was driving off road. Just my experience.
I 81 through NYS can be a trial if the weather turns bad and it can. Just check before leaving. It is seldom bad for more than 24 hours in the Fall.
Our route from Rochester also after Christmas, was always I 390 to 15 in Corning and then 15 to I 81 in Harrisburg PA from there I 81 is good. Have never encountered severe weather in years of travel, doesn't mean it can't happen.
Now we leave when we feel like it which means real soon before it gets really cold.
