It will be interesting what trans temp you see under load during warmer temps. Glad to see you replaced the fan clutch with a severe duty unit. You will know when your fan clutch is working properly as it will roar when first started cold and the engine speed is immediately raised to 1,500 or so RPM. Faulty fan clutches will not make any fan noise when cold. Before I did my cooling system work, my water temp had gone as high as 238 degrees on my OBDII scanner, halfway between 210 and 260 degrees on the gauge. Your temps sounded well within specs.
