The RPM number came from my Scangauge I have installed to monitor major engine functions, including RPM. Really any rpm above idle will produce the fan roar your looking for when cold. The roar will only last 8 to 10 seconds before the viscous fluid in the fan clutch disengages the fan.
Here is a picture of my rigs highest temp readings (238 degrees) pulling my boat up the Bishop grade last July. When I took this pic, I had been at or near wide open throttle for the past 15 minutes straight.

I only saw that temp twice, all other times it was around the 210 mark. My rad and water pump tested fine, I replaced the thermostat and serpentine belt for extra insurance. I also flushed a ton of bugs from the radiator and AC condenser and made sure the fan shroud had no gaps. Anyways, after this work, my rig runs no hotter than 215 degrees no matter what, just the way GM designed it.
