Speaking as the third owner of a Chinook Concourse motorhome and a bit of a researcher/historian responsible for most of the page located on the Tin Can Tourists Wiki site, I would chalk up the advice of "NeverHappy" as that of an internet troll.
As to your concern about the Chinook RV not being produced any longer, that's true -- but there's also a very good reason why a lot of them are still on the road with a large, dedicated contingent of registered owners associated with the East and West coast Chinook RV Club: They were well-constructed units and well ahead of their time (i.e., one-piece, all-fiberglas shell, solid oak cabinets vs. particle board laminates in the majority of today's RVs).
Your only major concern should be the condition of the fiberglas shell. The chassis it sits on is a Ford Econoline E350 Super Duty 1-ton with a Triton V-10 engine (E450 for the larger Glacier and Summit models), or Chevy C30 1-ton with a Vortec V-8 for the Destiny and Cascade variants.
BLUF (Bottom line up front): You won't have problems having the vehicle serviced at Ford or Chevy dealerships for powerplant or transmission issues. Most of the interior components like the refrigerator, A/C, stove, etc. all come from the same suppliers that other RV manufacturers use.
As for living in "stealth" mode, you might want to visit fulltimer Glenn Morrisette's To Simplify... blog for how he has managed in his cross-country travels in a Chinook Concourse (NOTE: He's currently blogging on plans to downsize to a Vanagon that he's now striping down and converting while living in his Chinook.)
Feel free to visit the Chinook RV Club and/or register yourself for the Chinook discussion group if you should have any other questions or concerns. They'll be answered by real expert owners instead of self-serving disgruntled trolls like NeverHappy.

I bought a Chinook Concourse....WORST rv I Ever had.
Horrible sleeping arrangement..obnoxious generator & furnace
Front seats don't swivel...ridiculous solar panel...
& I find it ugly !
The devil made me buy it
If you find a side entry model..you will get a permanent bed :-)
