Hi,
You do need a fuse between the controller and the battery bank.
Plugging the shore power cord into the inverter will be almost as if you were on shore power. The converter needs to be turned off, the fridge needs to be set to propane only. If there is an electric water heater it probably should be turned off.
Remember shore power is 3600 watts and the inverter is 3000. It is usually recommended to not use 100% of shore power on a continuous basis but rather only 80% or 2880 watts. I'd follow the same "rule of thumb" on the inverter and only load it to 2400 watts continuous.
If you plan to run the inverter at 2400 watts demand on the battery bank will be 240 amps. Doing a Peukert Calculation shows that at that level of load the battery bank will be at 50% in about 20 minutes.
I would recommend looking at AGM batteries instead of the flooded as they behave much better under heavy loads. A pair of 8d would be best and they should be wired in a balanced manner.
