If your tanks are 1/4 or more full, it will take a fair amount of time for the water to release enough energy to freeze. If the tank valves are attached directly to the tank (say within 6 inches +-) then the valve temperature will be similar to the tank temp. (As on bukhrn's rig).
On the other hand, if the only grey valve is at the dump end of the long PVC pipe, then that pipe will be full and exposed and it's temperature will drop much faster than the tank.
Your approach to heating/insulating sounds very thorough and well reasoned. Combined with the valuable advice from other posters you should be "good to go", as long as you have shore power.
edit: If you have an outside shower you should drain/turn off, since external plumbing often doesn't receive enough heat from the coach interior.
