A convection oven is nothing more or less than an oven with a fan to circulate the hot air.
The main times when I could see a traditional gas oven being unarguably superior to a microwave/convection oven are when you're boondocking and don't care to run the generator and when you are cooking enough things at once that you would like both to bake/roast and microwave simultaneously. (The first, of course, is less applicable if you have a large battery bank and inverter setup.)
