If your wife can drive a car, she can drive any rv made. While my DW doesn't drive our mh (her choice), I'm fully confident that she could. It's not that difficult.
With any type of trailer, typically backing is the main issue most drivers have.
I have seen table/chair set up in all types of rvs, but most common in Class A's.
When you say "campgrounds"....are you only referring to state supported type of campgrounds or are you also including commercial rv parks? Big difference. If that is the case, I think I would go with a Class C and a small toad.
