My rig is counter space challenged also. I use a power strip at the dinette for my coffee maker. I don't use a toaster but it would work there also. There is an outlet right above and I attached the strip to the wall under the window with Velcro. It also works great as a recharging station. I removed the cab-over mattress and use that large space for many things including counter space. I keep a 2-tier basket for fresh fruits and vegetables there. It allows me to keep clutter off the dinette (and away from the dog). The coffee maker was there before I decided I liked it better on the dinette.
