Remember that full time living in an RV is a string of compromises. Lots of things we would 'like' are not practical and so we have to work around them.
Bunk beds are possible if you remove the queen and create a single but it still requires a fair chunk of 'engineering' to make it work.
Finding someone with the skills and knowledge at an affordable price is going to be very hard - most people end up doing it themselves and learning the hard way.
