Roof AC units on, Roof fans/vents open or closed?

We're in SW Fla and it's really heating up here. We plan on leaving this upcoming Friday to head back to NJ. With both units running as well as the dash air should the roof fans/vents be open or close...

Same thing I do in the car. AC doesn't get cold for a minute or two. By the time I'm through two traffic lights and heading toward the interstate, we're good!
