Just some clarification
Temperature Control
Your Dometic RM2351 does not have an adjustable temp control on upper panel.
It does have a factory pre-set temp control that will maintain food section temps between 36*F and 42*F.
The 'thermistor' is the sensing unit that the 'thermostat' uses as a reference for operation of heating sources (electric element or propane)
The 'thermistor' should be on far right fin mid position in food section with just the tip protruding above the plastic clip.
You can make minor adjustments (4*F-6*F)to food section temps by sliding the clip Up/Down on the fin.
UP.....COOLER
DOWN...LESS COOLER
FAN..
Do you have a 'Lower' Access panel/vent and a 'Roof Vent'
OR
Do you have a 'Lower' access panel/vent and an 'Upper' access panel/vent
If Lower and upper.........FAN is installed to help improve natural draft that removes heat from fridge cooling unit coils on back of fridge.
FAN would be installed center line/mid section of fridge just above the absorber tubes (slanted tubing) and controlled by a thermostat that is installed on far right fin of condenser coil (finned section at top of fridge)
When fin temp gets high thermostat turns fan on to help pull more air across backside of fridge. Then turns fan off when fin temp drops
IF you have 'Roof Vent' shouldn't need fan...provided you install new fridge with proper clearances.

Follow recommendations from Dometic on installation and clearances for proper cooling from your new fridge
