Well you won't have any problems travelling with 4 batteries and will have no problem dry camping for a day if not two. However I would recommend 2 things in your situation.
1. Change every lightbulb in your rig to the LED type bulbs. This will go a long way to covering the power usage of your fridge.
2. Although I encourage this for any residential install I think its more important for you. You should consider putting up about 400 watts of solar on the roof and a decent controller. Not crazy expensive and will pretty much satisfy the needs of the fridge in good weather. In bad weather count on running your genny 60 to 90 minutes per day. May 45 minutes when you make breakfast so you have use of all your appliances and the same thing at night at supper.
