JCat, we have exactly the system that you are referring to on our coach. We only draw water from the fresh tank (189 gal.). I can connect the shore water hose to fill our tank automatically.
I have a button that says, 'auto-fill', when I select that feature, the shore water will fill the fresh water tank when the level reaches about 1/4. The system will automatically fill the tank until a little over 3/4 and shut off.
I've used it a few times but just usually just fill the fresh and as it lasts quite a while. Maybe if we were at a location for a week or more, it would come in handy.
