The reason they come with short cords is to prevent them from being dropped into sinks with water and potentially electrocuting someone. The national electrical code for many years has mandated minimum distance that an outlet can be to a sink, it has also mandated that outlets in kitchens be equipped with GFCI breakers for at least the last 20 years. If the appliance cord is kept shorter than the minimum legal distance between a sink and an outlet and a tag is included saying not to use extension cords, then the manufacturers of the appliance have done all they can to insure someone does not try to clean it in a sink full of water while it is plugged in, etc.
