Pick up a set of "sheet garters" at Walmart for about $5. They're elastic straps that clip diagonally across the corners of the fitted sheet under the mattress to pull it tight for a snug fit. Regular queen sheets work well then. Personally, I like to have my toes hanging down over the end of the mattress when I sleep on my belly, so the short queen mattress suits me just fine.
