How much wider are the mirrors than the house (rear) part of the motorhome? On my RV, at least, they stick out a good ways from the side of the cab, but not all that much beyond the side of the house (which is wider than the cab). Like the others, I don't recommend making the mirrors narrower, but it's your vehicle, not mine.
That said, if your mirrors are like mine, they're on a single oval-shaped arm that can swing on a bracket on the RV. The mirror units proper are held on with a casting that fits into the arm and a couple of screws; removing the screws allows this casting to be pulled out of the arms. The arms appear to be (aluminum?) extrusions, and it looks like they could be shortened simply by cutting them down to the desired length with a hacksaw or similar tool.
I have power heated mirrors, and so there is an electrical cable running through the extruded tube. I assume there must be a connector of some sort on the cab side of the setup (there's none I see on the mirror head unit) that would permit the mirror heads to be entirely removed, rather than remaining attached via the wire.
(If you have a clear view from the inside rear view mirror to a back window, I'd recommend getting one of the decal wide-angle Fresnel lenses to put on the back window if you don't have one. They are fairly effective aids in seeing behind you, doubly so given the low cost.)
